Cheese or vegetable flan with shortcrust pastry

Preparation time: 70 minutes
Serves 8–10
Shortcrust pastry
200 g plain flour
Approx. 65 ml of water
80 g butter
¹/₄ tsp salt
230 g of ready-made shortcrust pastry
could be used instead of making your
own.
Vegetable flan filling
500–600 g vegetables (e.g. leeks,
carrots, broccoli, spinach)
50 g mature Cheddar cheese, grated
Butter
Cheese flan filling
70 g bacon lardons
280–300 g mature Cheddar cheese,
grated
Topping
2 medium eggs
200 ml double cream
Salt
Pepper
Nutmeg
Accessories
Round baking tray  27 cm
Method
Dice the butter, add to the flour, salt
and water and knead rapidly until a
shortcrust pastry mixture is formed.
Chill for 30 minutes.
Line the round tray with the pastry.

Method for the vegetable filling: wash,
trim and finely dice the vegetables.
Sauté in butter then leave to cool.
Arrange over the pastry and scatter
cheese on top.
Method for the cheese filling: fry the
bacon lardons and leave to cool.
Arrange over the pastry and scatter
cheese on top.
Start the Automatic programme or pre-
heat the oven.
Mix the eggs and the cream together,
then season to taste with salt, pepper
and nutmeg. Pour over the vegetable or
cheese topping, then place on the rack
on shelf level 1 and bake until golden.
