Sweating means cooking the onions in
their own juices, with the addition of a
little fat if necessary.
 Cut the onions up into small pieces
and place them in a solid cooking
container with a little butter.
 Cover the container with foil that is
temperature-resistant up to 100 °C
and resistant to steam.

Conserving apples

The storage life of untreated apples can
be extended. Steam-treating the apples
reduces rotting. Once treated, the
apples will keep for 5 to 6 months when
stored in a dry, cool and well-ventilated
place. This method is only suitable for
apples and not for other types of fruit.

 Mix 6 eggs with 375 ml milk (do not
beat into a foam).
 Season the egg and milk mixture and
