Approximate preparation time: 20 minutes.
Preheat the Cuisinart
*
to High.
Insert the slicing disc, adjusted to 6mm, into the large
work bowl of the Cuisinart
eggplant, zucchini, onion, mushrooms and tomatoes
,
ripe
into rounds.
Toss vegetables with the olive oil, salt and pepper.
Arrange the eggplant, zucchini and onions evenly
spaced on both sides of the preheated Griddler
Grill 2 to 4 minutes per side. Add the mushrooms; grill
about 1 minute per side. Reserve grilled vegetables on
a platter and reduce the heat to Low. Grill the tomatoes,
about 30 seconds per side.
On either a platter or eight individual plates, build the
Napoleons in the following order: eggplant, onion,
basil, goat cheese, tomato, mushroom, zucchini,
finishing with another eggplant round.
*Try to select a medium-size eggplant that fits the
feed tube.
