OPERATING PROCEDURES
Draining Product from the Freezing Cylinder
1. With a pail beneath the door spout, press the 
Wash symbol
remove the barrel pressure. Close the draw valve,
remove the cotter pin from the pump assembly and
remove the feed tube.
Important! Removing the feed tube without first
removing the barrel pressure will cause mix to spurt
out.
Open the draw valve to drain the remaining product.
2. When the flow of product stops, close the draw valve
and press the Wash symbol
mode.
3. Remove the pump clip and pump assembly.
Repeat steps 1 through 3 for the other side of the
machine.
Rinsing
1. Pour 2 gal. (7.6 L) of cool, clean water into the mix
hopper. With the blue hopper brush, scrub the mix
hopper and the mix-level sensing probe. Using the
double-ended brush, brush-clean the mix inlet hole.
(See Figure 6-53.)

Note: Do not brush-clean the mix inlet hole while
the machine is in the Wash mode.
2. With a pail beneath the door spouts, raise the prime
plug (soft serve side only) and press the Wash
symbol

3. When a steady stream of rinse water is flowing from
the prime plug opening in the bottom of the freezer
door, open the draw valve. Drain all the rinse water
from the door spout. Close the draw valve and push
the prime plug down (soft serve side only).
4. Press the Wash symbol
mode.
5. Repeat steps 1 through 4 using clean, warm water,
until the water being discharged is clear.
Repeat steps 1 through 5 for the other side of the
machine.

Hopper Cleaning
1. Prepare a pail of approved 100 ppm cleaning solution
(examples: 2-1/2 gal. [9.5 L] of Kay-5
2 gal. [7.6 L] of Stera-Sheen
Important! Use warm water and follow the
manufacturer's specifications.
2. With the prime plug pushed down (soft serve side
only), pour the cleaning solution into the hopper.
Allow the solution to flow into the freezing cylinder.
3. Using the blue hopper brush, clean the mix hopper
and the mix-level sensing probes. Using the 
double-ended brush, clean the mix inlet hole.
Note: Do not brush-clean the mix inlet hole while
the machine is in the Wash mode.
