Let dough rise
The dough rises significantly faster than at room temperature and
does not dry out. Only start operation when the cooking
compartment has completely cooled down.
Always let yeast dough rise twice. When the dough rises
for the first and second time, observe the information in
the setting tables (dough doneness and individual
doneness).
Dough doneness
Put the dough in a heatproof dish and place it on the
grid. Set as shown in the
table.

defrost
Suitable for defrosting frozen fruit, vegetables and
pastries. It is best to thaw poultry, meat and fish in the
refrigerator. Not suitable for cream or whipped cream
cakes.
Use the following shelf positions for defrosting:
1 grid: height 2
2 grids: height 3+1
The times given in the table are guideline values. They
depend on the quality, freezing temperature (-18°C) and
the nature of the food. Time intervals are indicated. Set
the shortest time first and extend
these if necessary.

Keep warm
You can keep cooked food warm at 70 °C using the top
and bottom heating method. This prevents
condensation from forming and you do not have to
clean the interior space.
Never keep the cooked dishes warm for longer than two hours.
Please note that some dishes continue to cook while they are
kept warm. Cover the dishes if necessary. off.

Do not open the appliance door during fermentation,
otherwise moisture will escape. Do not cover the dough.
During use, condensation is created and the door glass fogs
up. Remove the interior space after fermentation. Dissolve
limescale residues with some vinegar and remove with clear
water.
Individual doneness
Place the cake at the shelf level indicated in the table.
If you want to preheat, the individual doneness takes
place outside the appliance in a warm place.
Temperature and duration of fermentation depend on the
type and quantity of the ingredients. For this reason, the
values in the setting table are guideline values.

Tip:
Flat or batch frozen products thaw faster than
when frozen as a block.
Remove frozen foodstuffs from the packaging and
place on the rack in a suitable form.
Stir or turn the food products once or twice in between.
Large pieces must be turned repeatedly. If necessary,
take the food products apart in the meantime or
remove thawed pieces from the cooking compartment.
Leave the defrosted food products to rest in the switched-
off appliance for another 10 to 30 minutes so that
the temperature is evenly distributed.
