Fudge and Penuche
Speedy KitchenAid Frosting
PENUCHE
Butter
2 tablespoons but-
1½ cups granulated
ter or margarine
sugar
1
teaspoon vanilla
1 cup brown sugar
½ cup chopped
1/3
cup light cream
walnuts or
1/3
cup milk
pecans
Butter sides of a heavy 2-quart saucepan. In
it, combine sugars, cream, milk and butter.
Heat over medium heat, stirring constantly,
until sugars dissolve and mixture comes to a
boil. Cook to soft ball stage (238°F.), stirring
only if necessary. Immediately remove from
heat and cool to lukewarm (110°F.). Do not
stir.
Pour into Bowl and add vanilla. Attach
Bowl and Beater. Gradually turn to Speed 2
and beat about 5 minutes or until candy be-
comes very thick and starts to lose its gloss.
Quickly stir in nuts on Speed 1 and spread
in buttered shallow pan. Score while warm;
cut when firm.
