It is important that the freezer be disassembled, washed, lubricated and sanitized before operation.

The soft serve freezer must be disas- sembled, washed and sanitized according to the instructions in this manual. Always sanitize before start-up to ensure the best possible cleanliness.

To assemble the freezer you will need an approved lubricant, such as Petrol Gel. Make sure all parts of the assemblies have been washed and sanitized before assembling.
