12.2 CLEANING EXTERNAL SURFACES OF THE APPLIANCE

Surface cleaning includes cleaning of the side pannels of the machine and other
external parts of the machine that are not in contact with the ice cream mix.
It is strictly forbiden to use abrasive pads or aggressive cleaning agents,
which can damage the surfaces.
 turn the machine off with On/Off SWITCH;
 make sure that the mixture treating cylinder door and the outlet opening
cover are well closed;
 clean the surfaces and make sure that the cleaning agent does not come
in contact with the parts which come in contact with ice cream mixture.
12.3 CLEANING AND SANITIZING PARTS THAT COME IN
CONTACT WITH THE ICE CREAM
All parts, which come into contact with ice cream mixture, must be sanitized
before and cleaned after every use. The frequency of cleaning and sanitizing
must comply with all applicable health codes.
Correct regular sanitizing prevents the growth of bacteria and ensures excellent
test results when your machine is inspected by your local health department.
12.3.1 OUTLINE OF CLEANING AND SANITIZING PROCESS
 Rinse the processing cylinder
 Disassemble the parts, wash and rinse
 Sanitize parts and air dry
 Sanitize hands and lubricate gaskets with food grade lube
 Reassemble the appliance
 Sanitize the processing cylinder
