Check Filter Pan: Use a new filter pad on the first filter of each day, but the same

filter pad can be used the rest of the day, except for fish vats. Change the filter
pad after filtering a fish vat. Make sure that the filter pipe is tightly connected,
and that the filter drain pan is as far back under fryer as it will go and the filter
pan cover is in place. If the filter drain pan or cover is not in place, the display
shows "CHK PAN".
Make sure oil is hot: The best results are obtained when the frying oil is filtered

at the normal frying temperature.

Press and release the down arrow button and display shows "2.MAINT

Press "✓" button for yes and display shows "MAN FILTER" "YES NO".

Press "✓" button for yes and display shows "DRAINING" and the oil drains from

the vat, or press "X" button for no and controls return to normal operation. (If
control suspects oil in drain pan "CAUTION IS THERE OIL IN PAN?" "YES NO"
shows in display. Make sure drain pan is empty before proceeding.)
If the oil does not drain completely and immediately, use the white cleaning

brush to push through any drain clogs. Remove the brush immediately, before
the drain closes to prevent damage to the drain or brush.
Once oil has drained from vat, remove the basket support from the vat.

Use the gong brush to scrub the walls, corners and bottom of the inside of the

vat. Use the angle brush to clean in between and underneath burner tubes,
corners of vats and other hard-to-reach areas. Be careful not to damage
sensing probes.
