H. Restore electrical power to the unit and test the replacement Temperature Control Sensor for
proper operation. NU-VU

CONTROL, How To Adjust).
PROOFER HUMIDITY CONTROL SENSOR, How To Replace:
MAKE SURE ALL POWER TO THE UNIT IS OFF. FAILURE TO DO SO MAY CAUSE
SEVERE EQUIPMENT DAMAGE OR PERSONAL INJURY!
A. Remove the Control Panel on the face of the unit to expose the wiring connections for the Proofer
Humidity Control Sensor [11]. Locate the Proofer Humidity Control Circuit Board [10] and
disconnect the Sensor wires from the Circuit Board.
B. Remove the Side Access Panel [74] from the left side of your unit. Carefully follow the Sensor
cable down the side of the unit and through the Proofer wall to where both Proofer Sensors are
located. Remove the Proofer Humidity Control Sensor from the mounting bracket and pull the
old Sensor and its cable out through the Proofer wall. Carefully pull the old sensor and cable
from the fiberglass sheathing.

Uncoil the new Control Sensor and cable, using extreme care not to kink or twist it in any way!
D. Starting at the Circuit Board, carefully feed the Sensor of the new cable through the fiberglass
sheathing and into the Proofer compartment. Secure the Sensor in the mounting bracket.
E.
Connect the two terminals at the end of the Sensor cable to the Proofer Humidity Control Circuit
Board. Secure the fiberglass sheathing on the sensor cable so that the cables are completely
covered and the sheathing does not move back and forth to expose the cables.
IMPORTANT: THE RED LEAD FROM THE SENSOR CABLE MUST BE INSTALLED ON
THE TC "-" TERMINAL FOR PROPER OPERATION OF THE SENSOR!
F.
Use a high-temperature silicone or gasket sealant to seal the Sensor cable from both sides where
it passes through the side of the Proofer.
G. Replace the Control Panel and Side Access Panel, being careful not to pull or pinch any wires
while replacing these panels.
H. Restore electrical power to the unit and test the replacement Humidity Control Sensor for proper
operation. NU-VU

60-MINUTE OVEN/PROOFER TIMER, How To Replace:

A. Remove the Control Panel on the
face of the unit to expose the wiring
connections for the 60-Minute
Oven Timer [24] and Proofer Timer
[36].
B.
Remove the Knob of the defective
Timer by pulling it straight out
from the face of the Control Panel.
C.
Remove the two screws securing
the Oven Timer [24] or Proofer Timer [36] to the Control Panel and pull the Timer out from the
back of the Panel.
