F.
Position the replacement Solenoid Valve in the unit and secure it into place. Make sure the water
flow direction as marked on the Solenoid Valve body is the same as that observed and noted in Step
"E".
G. Position the plumbing connections on the Solenoid Valve and snug them into place, but do not
over-tighten the fittings! If any joint leaks when tested and further gentle tightening does not stop
the leakage, the entire compression fitting must be replaced. If you use pipe dope or thread sealing
compound, take care not to get any compound in the tubing or Valve. Any excess compound may
be flushed through the tubing and cause the Solenoid Valve to stick open or closed, or may clog the
Injection Nozzle [85] in the Proofer.
H. Reconnect all wiring as labeled. Make sure all connections are clean and tight.

Restore only the water supply to the unit. Check the plumbing for leaks on the intake side of the
replacement Solenoid Valve.
J.
Now restore electrical power to the unit and activate the AUTOMIST Humidity Control [81]. Check
the Solenoid Valve for proper operation, and the plumbing for leaks on the outlet side of the Valve.
K. Wipe up any spilled water and replace the Side Access panel. Be careful not to pull or pinch any
wires while replacing the panel.

DIGITAL THERMOMETER, How To Replace:

MAKE SURE ALL POWER TO THE UNIT IS OFF. FAILURE TO DO SO MAY CAUSE
SEVERE EQUIPMENT DAMAGE OR PERSONAL INJURY!
A. Remove the Side Access Panel [74] on the left side of the unit
to replace the Oven Thermometer [25], and the Side Access
Panel on the right side of the unit to replace the Proofer
Thermometer [37]. The Digital Thermometer is battery
powered, so there is no need to make or break any internal
electrical connections.
B.
Carefully follow the Thermometer sensor cable to where it
enters the side of the Oven or Proofer, and trace it to where the
sensor is located. Remove the Thermometer sensor from its
mounting on the inside of the Oven or Proofer and pull the old
sensor and its cable out through the side of the unit. Carefully
pull the old sensor and cable from the fiberglass sheathing.
C.
Remove the three screws holding the Thermometer to the front of the unit and pull the defective
Thermometer out through the front of the SUB-123.
D. Feed the sensor end of the new Thermometer through the front of the unit and secure the new
Thermometer in place with the three mounting screws.
E.
Carefully feed the sensor and cable of the new Thermometer through the fiberglass sheathing.
Feed the Thermometer sensor through the side of the Oven or Proofer and secure the sensor in the
mounting bracket. Secure the fiberglass sheathing on the sensor cables so that the cables are
completely covered and the sheathing does not move back and forth to expose the cables.
F.
Use a high-temperature silicone or gasket sealant to seal the sensor cable from both sides where it
passes through the side of the Oven or Proofer.
G. Replace the Access Panel, being careful not to pull or pinch any wires while replacing the panel.
H. Restore electrical power to the SUB-123.
