Basic recipe for pizza dough
250 g flour

Put the flour in a bowl and mix with the salt. Press a well in the center. Dissolve the yeast in the lukewarm water
while stirring. Stir the sugar briefly into the yeast solution and place this mixture in a warm place for about 5 minutes
until small bubbles form. Now pour the yeast solution into the well in the flour and knead it in. If the pizza dough
is too dry, add a little more water if necessary. Gradually knead the olive oil into the dough until it is completely
absorbed. Knead the yeast dough until it peels away easily from the side of the bowl. Remove the pizza dough
and knead on a floured work surface for about 5-10 minutes more, until smooth. Form into a ball, place in a bowl
and let rise, covered, in a warm place for about 1 hour until doubled in volume. Then knead again briefly on a
floured work surface and roll out evenly.
Cut small dough sheets with the help of the dough cutter.
Pizza sauce
500 ml strained tomatoes
1 onion
2 cloves of garlic
5 tablespoons tomato paste
1 tablespoon olive oil
1 tsp. sugar
1 tablespoon oregano, dried
1 handful basil leaves, finely chopped
Salt and pepper
Peel and very finely chop the onion and garlic. Heat the olive oil in a saucepan over medium heat and sauté
the diced onion and garlic until translucent. Add the tomato paste and sauté. Sprinkle the sugar over the top and
let it caramelize briefly. Add the strained tomatoes and herbs, mix thoroughly and simmer for 10 – 15 minutes.
Then season with salt and freshly ground pepper.
You can top the dough according to your personal preferences. There are no limits to your creativity. If you want
to make pizzas quickly, you can also use ready-made pizza dough and pizza sauce from the supermarket.
Pizza with mixed mushrooms
Dough from basic recipe
Chanterelles, porcino mushrooms, button mushrooms and white truffles (according to season), ready to cook
Garlic
Sunflower oil
Salt, pepper, chili powder
Mozzarella, drained
Mix the sunflower oil with the finely chopped garlic, chili, salt and pepper to obtain a marinade. Cut the
mushrooms into thin slices and mix them with 2/3 of the marinade, then leave to rest for around 1 hour. Sauté
the mushrooms at medium temperature. Season to taste with chili powder, salt and freshly ground pepper. Fi-
nely dice the mozzarella.
