GO Menu Theory of Operation

IMPORTANT: The type and quantity of product cooked and held is unique to each store, day,
and time.
All the Recipe Book menu parameters are used by the UHC and the operator when using the
GO menu to manage product. All six rows of shelves can be individually broken into one,
two, or three Zone Splits. As an example, hotcakes will require a wider tray then sausage pat-
ties, and may require a two or three bins wide Zone Split. Use two or more bins to rotate a
product.
1. Cook product, place in the first tray, and then slide it into an assigned bin, set the
timer.
2. When the timer flashes yellow, cook more product and repeat the previous process,
and then set a second timer.
If the first timer runs out with product still in the tray, discard the product and
l
cancel the timer. The second timer turns green (default color).
If all the product is used before the timer expires, cancel the timer. The
l
second timer turns green (default color).
3. Repeat steps 1 and 2 to maintain rotation.

Daily Set-up

Once the shelves heat, prepare the trays with product as needed. Insert the trays into the
appropriate bin, and start the timer. Note: product, rows, and bin parameters are managed in
the recipe book menu.
1. Power on the UHC and the Home menu displays
2. Tap the GO menu icon.
