    Henny Penny Universal Holding Cabinet The Universal Holding Cabinet (UHC) maintains freshness and presentation of menu items before serving. Additionally, the UHC helps the operator manage product First In and First Out (FIFO) inventory to ensure just in time availability, with minimal product waste.

    Henny Penny Universal Holding Cabinet GO Menu Theory of Operation IMPORTANT: The type and quantity of product cooked and held is unique to each store, day, and time. All the Recipe Book menu parameters are used by the UHC and the operator when using the GO menu to manage product.

Starting and Canceling a Timer The UHC uses a First In and First Out product rotation. Instead of using one wide bin, mul- tiple narrow bins can be used to rotate product, to reduce product waste.

    Henny Penny Universal Holding Cabinet 1. Tap a menu item to start a timer. A countdown timer displays on the bin. 2. Tap the same timer again, and the timer pauses. 3. Tap the timer again to reduce the cook time by 5 minutes, each tap.

    Henny Penny Universal Holding Cabinet 1. Watch for timers turning yellow, which indicates they are expiring. 2. Cook more product if needed. 3. Tap to stop (cancel) the timer flashing discard. 4. Turn shelf temperature to: select the temperature the shelf should cool to when in Eco Mode. Default is recommended. Note: the shelf will need to reheat to holding temperature when placed back into use.

Tap the Lock icon from the Clean menu or the Clean Screen button, The ten second lock screen displays.
