    Henny Penny Universal Holding Cabinet The Universal Holding Cabinet (UHC) maintains freshness and presentation of menu items before serving. Additionally, the UHC helps the operator manage product First In and First Out (FIFO) inventory to ensure just in time availability, with minimal product waste.

Starting and Canceling a Timer The UHC uses a First In and First Out product rotation. Instead of using one wide bin, mul- tiple narrow bins can be used to rotate product, to reduce product waste.

Turn shelf temperature to: select the temperature the shelf should cool to when in Eco Mode. Default is recommended.
