The highlight colors behind the measured probe temperatures indicate the
status of each roast in the cooking cycle.
Red
indicates the roast is cooking.
Yellow
indicates the roast has finished cooking and is now in the holding
(dwelling) period.
Green
indicates the roast is ready for validation.

Validate the cooking parameters of each roast before removing the roasts from
the oven.
To validate the roasts, do the following.

1.
Touch
the CCP icon
numbers are green, indicating they fall within acceptable CCP ranges.
2.
Swipe
the screen from bottom to top to validate CCP data for Probe 2.
3.
Continue
swiping to scroll through and validate the CCP data for the
remaining probes. After all data has been validated, the clipboard icon
turns green.
Touch
the clipboard icon. Complete the validation paperwork and remove
the roasts.
The roasts have been validated.
