During the two-minute countdown period,
bottom rack into the oven.
NOTE:
roast 3 in the front.
Slide
the top rack into oven.
NOTE:
roast 1 in the front.

Connect
the probes to the corresponding numbered port on the manifold.

After the two-minute countdown period ends, the cooking process begins.
Day Part
cooking time is 3–4 hours. Target temperature = 138°F.
Over Night
cooking time is 5–6 hours. Target temperature = 135°F.
When the roasts reach the applicable target temperature, the oven will
automatically switch to 150°F holding (dwell) mode.
An alarm will sound at the end of the holding period.
Day Part
holding time is 30 minutes.
Over Night
holding time is 45 minutes.
After slicing the roast, re-insert the probe per your store's guidelines and
continue the holding mode.
The roasts are now cooked. Before removing them, validate each according to
the procedure described in topic How to Monitor and Validate Roasts.
