UTILISATION
The bain-marie and hot air steam cabinets are solely for maintaining temperature levels; they can-

not be used to cook or reheat food.
Current legislation requires the food to be loaded in bain-marie at a temperature above 63°C.

OPERATION

HOT STEAM CABINETS
Set the enclosure(s) in use to 80°C.

Allow to preheat for 30 mins.

Insert food that has already been heated.
