Sharpening Combonation Blades
Set-up
•
Ensure the 20° knife guide is installed
•
Make sure the blade is clean and dry before sharpening
•
Set the power switch to low speed (I)
Ceramic
Hone
For combination blades: blades with both serrated and straight
edges
1. Apply masking tape over the serrated portion of the edge to
help prevent sharpening that portion.
2. Sharpen the straight edge first following the single-bevel or
double-bevel process.
3. Then remove the tape and hone the entire blade as you nor-
mally would in the Hone stage.
For fully serrated blades: (blades such as bread knives)
1. Do not sharpen. Use the Hone only for 5-20 strokes.
