Sharpening Kitchen and Pocket Knives
Sharpening stage
1. In one smooth motion: place the blade fully into the left
sharpening slot with the side of the blade resting on the
angle guide surface and the cutting edge resting on the
edge guide surface and pull the blade through the slot from
heel to tip.
Note: Proper knife-sharpening position: Place knife blade in
the guide so that the side of blade is against the smooth angle
guide surface of the guide slot. Insert knife blade all the way to
the bolster/finger guard.
Use only the weight of your blade to keep the cutting edge
in contact with the edge guide as you pull through for best
results.
2. Place the blade in the right sharpening slot with the side
of the blade resting on the angle guide surface and the
cutting edge resting on the edge guide surface and pull
the blade through the slot from heel to tip.
3. Repeat, alternating strokes in the left and right sharpening
slots for a total of 6-10 strokes.
