    ANGE ESCRIPTION The Wendy’s Gas Range consists of a split gas griddle top (model P36N-TTT) attached to a convection oven base (model TVGS/12WC). The Range can be ordered for either natural gas or propane use, and can be ordered with electrical connection options (including 120 or 208/240 volts, 1-phase only, 50 or 60 hertz).

Ventilation which fails to properly remove flue products can cause headaches, drowsiness, nausea, or could result in death. All units must be installed in such a manner that the flow of combustion and ventilation air are not obstructed.

    NSTALLATION ’ ENDY ANGE NSTALLATION NOTICE These installation procedures must be followed by qualified personnel or warranty will be void. Local codes regarding installation vary greatly from one area to another.   • Page 10 NSTALLATION ’ ENDY ANGE Step 2: Installation of Legs or Casters on Oven Base 1. Raise oven sufficiently to allow clearance for the legs or casters to be attached. Use of a lift truck or other mechanical lifting means is recommended. For safety, “shore up” and support the oven with an adequate blocking arrangement strong enough to support the load.

NOTICE For an appliance equipped with casters, (1) the installation shall be made with a connector that complies with the Standard for Connectors for Movable Gas Appliances, ANSI Z21.69 or Connectors for Moveable Gas Appliances, CAN/CGA-6.16, and a quick-disconnect device that complies with the Standard for Quick-Disconnect Devices for Use With Gas Fuel, ANSI Z21.41, or Quick Disconnect...

Check that there is sufficient clearance to open oven doors, and to pull-out the grease drawer and oven racks. 9. Check that adequate ventilation (fresh air supply and hood exhaust) is available to the room in which the appliance will operate per previous instructions.

    PERATION ’ ENDY ANGE PERATION DANGER EXPLOSION HAZARD In the event a gas odor is detected, shut down equipment at the main shut off valve. Immediately call the emergency phone number of your gas supplier. CAUTION To eliminate gas build up which could result in an explosion, in the event of main burner ignition failure a five minute purge period must be observed prior to re-establishing ignition source.
  • Page 17 PERATION ’ ENDY ANGE The range top has a single pilot that is lit using the TOP SURFACE IGNITION switch located on the base oven control panel. The pilot can viewed through a hole in the range top’s front valve panel to verify its status.

  • Page 19 OOKING INTS ’ ENDY ANGE OOKING INTS A convection oven is a different type of oven that offers many features and advantages to food service operation. The additional capabilities and features of the oven require some learning. However, the operation of the oven is not difficult to understand or control once you have some practice. Convection ovens operate much like a standard oven: you turn the oven ON and select a cooking temperature.
  • Page 20 OOKING INTS ’ ENDY ANGE COOKING PROBLEMS AND SOLUTIONS If… then… Cakes are dark on the sides and not done in the center… lower oven temperature. Cake edges are too brown… reduce number of pans or lower oven temperature. Cakes have a light outer color… raise temperature.

    ANGE LEANING Southbend equipment is sturdily constructed of the best materials and is designed to provide durable service when treated with ordinary care. To expect the best performance, your equipment must be maintained in good condition and cleaned daily. Naturally, the periods for this care and cleaning depend on the amount and degree of usage.
  • Page 22 ANGE SEMI-ANNUAL CLEANING At least twice a year have your Southbend Authorized Service Agency or another qualified service technician clean and adjust the unit for maximum performance. At least twice a year the oven’s venting system should be examined and cleaned.

    NOTICE Warranty will be void and the manufacturer is relieved of all liability if service work is performed by other than a qualified technician, or if other than genuine Southbend replacement parts are installed. ACCESS TO SERVICEABLE COMPONENTS To remove the top valve panel, first remove the knobs. Then remove the two screws on the bottom of the valve panel.

  • Page 28 DJUSTMENTS ’ ENDY ANGE ADJUSTING DOOR CHAIN MECHANISM The door chain mechanism causes the left and right doors to open and close together. To adjust the door chain mechanism, do the following: 1. Remove lower front panel that covers the door chain mechanism (shown in following drawing). 2.
  • Page 29 DJUSTMENTS ’ ENDY ANGE ADJUSTMENT OF OVEN TEMPERATURE WARNING THIS PROCEDURE SHOULD ONLY BE PERFORMED BY A QUALIFIED SERVICE TECHNICIAN FAMILIAR WITH ELECTRICITY AND ELECTRICAL COOKING EQUIPMENT REPAIR. If the oven temperature requires adjustment, do the following. 1. Unplug the oven (or disconnect the power) and remove the lower front panel, right side panel, and insulation.
  • Page 30 DJUSTMENTS ’ ENDY ANGE MEDIUM HIGH 4. Repeat Step 3 to adjust the LOW to 325° F (163° C) and MEDIUM to 335° F (168° C) potentiometers. Always allow the oven to cycle twice after adjustment to confirm accuracy. After completion of calibration, remove the oven thermometer, and reinstall the side panel and insulation along with any other steps necessary to return the unit to service.

In case of problems in operation at initial installation, check type of gas and manifold pressure and compare with information listed on the serial plate.
