Chocolate cherry muffins

Makes approx. 12
Mixture:
100 g mocha or bitter chocolate
100 g butter
3 eggs
80 g icing sugar
10 g instant cappuccino powder
100 g plain flour
1 tsp baking powder
Filling:
200 g cream cheese, e.g. mascarpone
70 g icing sugar
1 egg
10 g plain flour
200 g jar of cherries, drained
12 muffin cases (7 cm C)
Method:
1. Melt the chocolate in the microwave
for 3 minutes at 450 watts.
2. Beat the butter until creamy, stir in
the eggs and sugar alternately, a little
at a time. Fold in the cooled, melted
chocolate, the cappuccino powder, the
flour and the baking powder.
3. Blend together the mascarpone,
icing sugar, egg and flour for the filling.
Drain the cherries.
4. Spoon half the chocolate mixture into
the bottom of the muffin cases, followed
by half of the cherries and all of the
mascarpone mixture. Then add the rest
of the chocolate mixture and the
cherries. Bake, then decorate with plain
or milk chocolate cake covering if you
wish.

Temperature: 160-180 °C

Duration: 40-50 minutes + pre-heating
Note
The mixture can be baked in a large
cake tin instead of muffin cases.
Double the quantity of fruit and
increase the baking time to approx. 50
minutes. Apricots can be used instead
of cherries.
