How to release the pressure after cooking
Always check the recipe you are preparing, to determine whether the pressure cooker must
be left to cool down on its own or whether a fast cooling method must be used. You can use
either of these two methods to release the pressure:
1. Allow the pressure to be released naturally
To do this, remove the cooker from the heat and allow the pressure
inside it to drop slowly. Depending on the quantity of food and liquid,
this may take between 10 and 15 minutes. When the cooker has coo-
led down, remove the rotary valve to release the pressure (Fig. 10).
If there is still any pressure left inside the cooker, it will be expelled
through the vent.
2. Release the pressure by cooling the cooker with cold water
distance, as hot steam from the cooking process may still be present in the cooker.
When the pressure has been released completely, shake the cooker gently before removing the
lid, especially after cooking rice, purées and foods that contain grease or sauce. This will prevent
those foods from splashing you when you open the lid.
WARNING: NEVER FORCE THE LID OPEN
Put the cooker in the sink and run cold water over the lid
(Fig. 11). Once the pressure has dropped, remove the rotary
valve (Fig. 10) and wait for the steam to dissipate comple-
tely. This method is used when it is necessary to release
the pressure as quickly as possible. It is mainly used when
preparing vegetables, seafood or other delicate foods that
could easily be overcooked.
Once the pressure has been released, open the cooker by
turning the knob in an anticlockwise direction until the
clamp bar is in the lowest possible position (Fig. 6). Slide
