Cooking with the Fagor pressure cooker
Before using it for the first time
Before using the cooker for the first time, remove any stickers that might be present on its sur-
face. Traces of adhesive can be removed with a cloth or paper towel soaked in alcohol.
Wash the cooker well with a neutral soap and lukewarm water using a sponge or a soft cloth
to eliminate all traces of oil, grease, manufacturing and polishing residue. Fill the cooker with
water up to 2/3 of its capacity, close it and place it on the heat source. Leave on the heat for 10
to 15 minutes from the time it reaches the operating pressure. Then remove it from the heat and
release all the steam before opening the cooker. Carefully dispose of the liquid.
Wash the cooker again with a neutral soap and lukewarm water. Rinse it thoroughly with warm
water and dry immediately with a soft cloth to prevent limescale stains from forming.
Depending on the water hardness or the food and seasoning used for cooking, it is normal for
the part covered by the liquid or in contact with food to turn a darker colour. This will not affect
the food or the operation of your Fagor pressure cooker.
How to add food and liquids

Never fill the cooker more than two-thirds (2/3) of its volu-
me; this includes liquids and solid ingredients added to the
cooker (Fig. 1). The following liquids may be used: water, stock,
wine or any other liquid used for cooking, except oil. Oil may be
used to brown meat or poach onion before adding water, other
ingredients and closing the cooker. DO NOT USE OIL AS THE ONLY
LIQUID FOR COOKING.

When preparing foods that expand during cooking, such
as rice, grains or dehydrated food, do not fill or exceed the
"1/2" level of the cooker body (Fig. 2). If you exceed the cooker
filling levels, the safety devices may be damaged, increasing the
risk of suffering burns.
