4 .3 GENERAL DESCRIPTION

The slicing machine has been designed and
made to offer maximum safety when in use,
dur ing cleaning and or dinar y maintenance;
maximum hygiene fr om the use of inoxidisable
mater ials or
adequately pr otected against
oxidisation together with an attentive design of
all the par ts that come into contact with food;
maximum
cutting
together with stur diness and r eliability of the
str uctur e.
The machine is essentially made up of a base
that holds a cir cular blade that is ver tically
mounted and a sliding car r iage on bar s,
par allel to the cutting edge of the blade, which
in tur n holds a food plate.
The food plate is made up of a base plate and
an over plate which slides at r ight angles to the
edge of the blade for slicing the food; the
over plate also has an appr opr iate selfstopping
device, which can be r egulated in height, to
keep the pr oduct in its pr oper place dur ing
cutting oper ations (food pr ess).
Car r iage movement and blade r otation ar e
completely manual; by activating r otation of
the flywheel with the special handle the
car r iage is put into motion and at the same
time with a chain tr ansmission the blade is
tur ned.
The
pr oduct
is

blade; the thickness of the slice is r egulated by
a mechanical device which is automatically
star ted ever y time the car r iage comes back,

deter mined by the gr aduated handwheel.
All the components of the machine ar e made
of a light aluminium alloy, in stainless steel and
plastic for food pr oducts as accor ding to the
sanitar y r egulations in for ce.
The machine has
