Chicken & Vegetable Stir-Fry with Pasta
Serves 6
4 boneless chicken breasts
50g Parmesan, cut into 1.5cm cubes
1 large garlic clove, peeled
2cm piece ginger, peeled and sliced
1 red pepper, cored, deseeded and cut to fi t large feed tube
½ yellow pepper, cored, deseeded and cut to fi t large feed tube
2 large carrots, peeled and cut to fi t large feed tube
2 ½ tsp cornfl our
125ml chicken stock
3 ½ tbsp sesame oil
250g broccoli, fl orets cut to serving size pieces, stems discarded
3 tbsp soy sauce
6 tbsp medium-dry sherry
340g dry pasta e.g. fusilli or penne
Trim the chicken of all visible fat. Cut in half widthways, wrap in cling fi lm and freeze
for 25 minutes.
Insert the large chopping blade into the large work bowl and with the machine running,
drop the Parmesan through the small feed tube and process until fi nely chopped. Remove
and set aside. Add the garlic and ginger and process until fi nely chopped. Remove and
reserve.
Insert the slicing disc into the large work bowl and slice the red and yellow pepper using
the large feed tube. Place the carrots horizontally in the feed tube and slice. Remove
and set aside.
Remove the chicken from the freezer, place in the large feed tube, cut side down and
slice, then toss in 1 ½ tbsp sesame oil and set aside.
Combine the cornfl our and chicken stock in a small bowl.
In a large wok or non-stick frying pan, cook the chicken over a high heat for 4-5 minutes
or until cooked through. Remove from the heat and set aside.
Add the remaining sesame oil to the wok, when hot, add the garlic and ginger, stir fry for
10 seconds. Add the sliced carrots and stir fry for 45 seconds.
Add the broccoli fl orets and sliced pepper and stir fry for another 30 seconds.
Return the cooked chicken to the pan along with the soy sauce and sherry and cook for 30
seconds. Stir in the cornfl our mixture and bring to the boil. Reduce the heat and simmer.
Cook the pasta following the packaging instructions, drain and add to wok, toss to
combine.
Remove from heat, add half the Parmesan and toss through, then serve topped with
remaining Parmesan.
