Ginger Banana Pudding with Lime

Serve 6
1 banana, mashed
125g plain flour
100g caster sugar
3 tsp baking powder
200ml milk
85g unsalted butter, melted
1 egg
1 tsp ground ginger
100g soft light brown sugar
2 tbsp golden syrup
juice of 1 lime
200ml water
Salt
whipping cream to serve
Preheat the oven to 180ºC/gas mark 4.

Add the banana, milk, butter, egg and ginger to the blender jar. Blend on
n
high for 15 seconds. Sift the flour, caster sugar and baking powder into a
bowl with a pinch of salt. Add this to the liquid in the blender and blend
on high for 5 seconds (do not over blend). Pour this into a large greased
baking dish.
In a small pan add the brown sugar, golden syrup and 200ml of water and
n
bring to the boil. Pour the boiling mixture over the pudding then bake in
the oven for about 35 minutes. Once cooked drizzle the lime juice over
the pudding.
Using the processor with the whipping attachment, whip the cream on
n
high for about 3 pulses. Serve with the pudding.
