Gazpacho

Serve 6
500g vine tomatoes
½ cucumber, peeled
1 red pepper
1 small red onion
1 red chilli
3 garlic cloves, crushed
Bunch of fresh basil
1 tbsp fresh coriander
1 tbsp sugar
2 tbsp sherry vinegar
juice of 1 lime
1 tsp salt
50 ml olive oil
Place the tomatoes into the processor with the chopping blade and pulse
n
on low until they are chopped. Set aside into a large bowl. Place the
cucumber, red pepper, onion, chilli and garlic into the processor with the
chopping blade and pulse on high until chopped. Place these into the
bowl with the tomatoes.
Tear the basil and coriander into the the tomato mixture. Now add the
n
sugar, sherry vinegar, lime juice and salt. Stir the ingredients in the bowl
to combine, then set aside for 10 minutes.
Pour all the ingredients into the blender jar. Blend on low slowly adding
n
the olive oil.
Check for seasoning before placing in the fridge to be chilled for several
n
hours.
