Ricotta Pancakes

Makes about 12 pancakes
250ml full fat milk
250ml ricotta
2 large eggs
60g butter, melted
¼ tsp vanilla extract
½ tsp orange zest
60g caster sugar
120g plain flour
¼ tsp ground cinnamon
pinch of salt
1½ tsp baking powder
Place the milk, ricotta, eggs, butter and vanilla into the bender jar. Blend

on high for 15 seconds. Add the orange zest and sugar, blend for a further
10 seconds.
Add the remaining ingredients and pulse on high, until the ingredients

have mixed (about 6 times).
Melt a little butter into a hot pan. When ready, pour about 80 ml of the
n
batter into the pan. Cook for about 2 minutes or until ready, then flip and
cook for a further minute.
Keep warm in an oven at 140ºC whilst you cook the remaining pancakes.

Serve warm with a fruit compote or maple syrup.
