Thank you for purchasing new Giles equipment, model EOF-BIB/FFLT/24/24, manufactured by Giles Foodservice Equipment; Montgomery, Alabama (USA), hereafter referred to as "Giles". This model is a multi-purpose, high- capacity, electric Fryer, featuring two (2) 24” frying vats, one (1) 20” Boil-in-Bag (BIB) water vat for rethermalizing pouches of frozen food, and a built-in Dump Station.
Control, and Fire Protection of Commercial Cooking Operations, NFPA 96. Compliance with the above steps will help to ensure safe and proper installation of this equipment. If there are any questions concerning these procedures, contact a nearby Giles Manufacturer’s Representative, or call Giles Technical Support at 800.554.4537.
3. Using appropriate handling equipment and work practices, carefully remove the fryer from the shipping platform. The unit is extremely heavy, the uncrated weight for the EOF-BIB/FFLT/24/24 is in excess of 890 lbs (404 kg). Only use mechanical lifting equipment such as a forklift to lift the unit from skid, see Section 2-03.
NOTE: Giles shall not be liable for damages to a unit caused by the improper use of forklifts or other handling equipment, or by premature removal of the reinforcing bars. The bars must remain in place until the fryer has been located in the designated final operating position.
Installation EOF BIB/FFLT/24/24 2-04. Electrical Requirements CAUTION Fryers must be adequately and properly grounded. Improper grounding may result in electrical shock. Always refer to local electrical code to ensure proper grounding of this or any other electrical equipment. Always consult with an electrician, or other qualified service technician, to ensure circuit breakers and wiring are of sufficient rating and gauge to power this equipment.

These steps are typically needed only at the start of the day as cooking activity will normally keep cooking oil sufficiently agitated.

Only a general explanation is given here, always follow specific Deli procedures and Job-Aids, as the process may vary from user to user.

CAUTION Use extreme caution when placing pouches into HOT water and do so slowly to prevent splash. Scalding injury is possible should hot water from an unexpected splash contact bare skin.

Parts of the Fryer may be extremely HOT! Always wear thermal protective mitts or gloves when performing this procedure. 1. Giles recommends that after the fourth (4th) load has been cooked in a vat, the oil should be filtered. 2. Set the Heat Switch of the fryer unit to be filtered to the OFF position.

Leave the Drain Valve open and allow the oil to continually circulate through the system for at least 5 minutes.
The following describes the procedure for removing used cooking oil from the unit. Oil must be removed and discarded prior to performing a fryer Boil Out, or when it is no longer usable. A Giles Oil Caddy (not supplied) is depicted as being used for disposal of waste oil.

This section describes use and care of the reuseable, stainless steel, Filter Screen (SSFS). The SSFS is a direct replacement for paper filter media that can cleaned and reused many times. It is an optional item (Giles #41017) that can be ordered with new units, or purchased later.
