Reinstall the upper release sheets prior to using.
See Figure 139.

Note: Reverse the cooking side of the release
sheets on a daily basis (example: black side on odd
days; grey or brown side on even days).

Wash and rinse the grease pans in the
3-compartment sink.

Re-install the grease pans. See Figure 141.

Re-install the rear grease guard. See Figure 142.

Bring the cleaning tools to the 3-compartment
sink. Rinse or launder the mop sock; then place it
in a clean sanitizer pail. Once the grill pad and
sock pad have cooled, remove then wash and rinse
thoroughly at the 3-compartment sink. Allow to air
dry.

Flip the grill pad over and replace on the tool for
the next grill cleaning.
43.
Wipe the remaining grill surfaces with a clean
sanitizer-soaked grill cloth.
44.
Apply a light coat of fryer cooking oil to the entire
lower grill surface.
45.
Leave the upper platens in the OPEN position
overnight.
46.
After the grill pad has cooled, remove it from the
pad holder, wash, and rinse it thoroughly at the
3-compartment sink. Turn the grill pad over and
re-install on the grill pad holder.
Cleaning Procedure - 24 Hour Stores Only
(Grills Not Using Lower Release Sheets)
1.
Clean the grill using the Daily Cleaning
Procedures on pages 45-50,
steps 1 - 46.
2.
After the grill pad has cooled, remove, wash, and
rinse it thoroughly at the 3-compartment sink.
Turn the grill pad over and re-install on the grill
pad holder.
3.
Wash, rinse, and sanitize all utensils and tools
used to clean the grill at the 3-compartment sink.
4.
The grill is now ready to use.
