Put all ingredients except the oil into the blending cup. Run on medium
until well blended. While still running on medium, slowly add the olive oil
in a steady stream so that dressing becomes emulsified.

blending shaft, blend on medium to break up the garlic and shallot. Add oil,
¼ cup at a time, and blend, gradually increasing to high, until emulsified.
