In devices with water condensation, check that the condensation water's faucet is open;
Check the lid is closed and the chute with protection flap is in position, otherwise the device will not operate.
NO "oo" (two small squares) should show on the Display;
press the ON/OFF Pushbutton [K1].

Do not start beater before pouring mixture into the cylinder. The beater must not function dry, otherwise
itwill be damaged.
Note:
before beginning the production, wash, rinse and proceed at the hygienisation
with a detergent and disinfecting solution (see Section 7 - WASHING).
If you plan to have more than one consecutive production cycles, you can
avoid the washing between a cycle and the other, making sure you begin
with the clearer mixtures.
Before starting production ALWAYS check that beater's fixing knob [7]
and the tilting blade's fixing knob [24] (when supplied) are FIRMLY
TIGHTENED and that all the relevant gaskets are Intact and clear of any
fat. If the knobs should accidentally unscrew and fall in the cylinder
during the functioning, they would cause serious damages at the device.
check that extraction door is firmly closed and pour mixture in the cylinder. Only
use suitable perfectly preserved ingredients, in the correct amount. The maximum
and minimum amounts are indicated in the Technical Handbook, in the "Technical
Data" section.
Unsuitable mixture or insufficient amount of it can cause the develop-
ment of ice, and cause damages or irregular functioning at the cylinder
and beater, while an excessive amount of mixture can forbid the cor-
rect whipping, in addition to causing an excessive stress at the motor
and beater and overflows of product.

Production with TEiVIPERATURE cycle
When performing the TEMPERATURE CYCLE the machine keeps the mixture moving and cools it to the Final Temperature
[Tf], determining the consistency of the product. The cycle must be terminated manually using the appropriate push-
button.
close the cylinder lid;
The Final Temperature [Tf] must be programmed according to the level of ingredients in the mixture
which prevent freezing (e.g.: sugar or alcohol). For example, WEAK mixtures may reach - 5 . . . - 6 ° C ,
MEDIUM mixtures -7...-8°C and mixtures RICH in such ingredients -9...-10°C.
check and if necessary alter the Final Temperature [Tf] value set (see 6.3 Programming). The factory setting (-9°C) is
suitable for most ice cream mixtures;

press the TEMPERATURE CYCLE push-button [K6];
wait until processing has finished, indicated when the Final Temperature [Tf] set has been reached by the
REFRIGERATING SYSTEM [Z5] warning light going out and by the acoustic signal.
press the TEMPERATURE CYCLE push-button [K6] to terminate the cycle and stop the machine.
N.B.:
When the cycle is complete we recommend that you extract the product immediately, to prevent a change in
texture due to prolonged mixing.

Production with TIME cycle
When performing the TIME CYCLE the machine keeps the mixture moving and cools it for the Batch Freezing Time [M].
Cooling is automatically terminated when that time has elapsed.
close the cylinder lid;
check and if necessary alter the Batch Freezing Time [M] value set (see 6.3 Programming). The factory setting (12
minutes) is suitable for most ice cream mixtures;
press the TIME CYCLE push-button [K4];
wait until processing has finished, indicated by the REFRIGERATING SYSTEM [Z5] warning light going out and by the
acoustic signal.
press the TIME CYCLE push-button [K4] to stop the machine.
