Smokey Corn Cakes
Makes 12 Pancakes
2 large eggs
1/2 cup sifted all-purpose flour
1/4 cup milk
1 teaspoon baking powder
1 (15 oz.) can sweet corn, drained well
1 tablespoon brown sugar
4 strips bacon, cooked, chopped
butter, for serving
maple syrup, warmed, for serving
1 tablespoon bacon drippings, warmed (may substitute vegetable oil) to coat griddle

Install 2 reversible grill/griddle plates; griddle cooksides up.
2. Following the instructions outlined in the section "To Use as a Full Grill/Griddle" set up
the 8-IN-1 Grill Station in the open position. (See Figures 5 and 6.)
3. Preheat griddle to 400ºF.
4. Beat eggs in a medium mixing bowl until frothy, about 2 minutes. Add flour, milk, baking
powder, crumbled bacon.
5. Stir sweet corn into the batter.
6. When the blue READY light illuminates, use a heat-proof brush to lightly coat the both
cooking plates with bacon drippings.
IMPORTANT: Do not use non-stick sprays as they can cause build-up on the cooking plates.
Use vegetable or olive oil instead.

Use a 1/4 cup scoop to ladle batter onto the hot griddle. Cook until tiny air bubbles
form on top, 2 to 5 minutes; turn and continue cooking until the bottoms are browned,
2 to 3 minutes.
8. Repeat with remaining batter. Keep finished pancakes warm. Serve pancakes with butter
and maple syrup.
