Perfectly Grilled Chicken Breast
Serves 1
1 chicken breast*, boneless, skinless
Brine
1/2 cup water
1/2 tablespoons brown sugar
1/2 tablespoon Kosher salt
*Recipe may be increased as needed.
1.
Add brine ingredients to a gallon sized zipper lock storage bag. Mix well. Pierce chicken
breast several times top and bottom, then add to the brine. Refrigerate for 2 to 3 hours.
2. Install 2 reversible grill/griddle plates; grill cooksides up.
3. Preheat the 8-IN-1 Grill Station to 425ºF.
4. Remove chicken breast from brine; discard liquid. Replace the chicken breast into the bag.
Use a large mallet or heavy pan to pound the breast to a uniform 1/2" thickness.
Dry chicken with paper towels.
5. When the blue READY light illuminates, lift the lid and use a heat-proof brush to lightly coat
the upper and lower cooking plates with vegetable oil.
IMPORTANT: Do not use non-stick sprays as they can cause build-up on the cooking plates.
Use vegetable or olive oil instead.
6. Use the brush to oil both sides of the chicken breast before adding to the lower cooking
plate. Close the lid and grill for approximately 5 minutes.
7.
Wearing oven mitts, gently open the lid and turn meat 90º.
8. Close lid and grill chicken for an additional 2 minutes.
9. Remove chicken breast from the cooking plate. Allow chicken to rest at least 5 minutes
before serving.
