Grilled Chicken Quesadilla
Serves 1
• 2 (8-in.) flour tortillas
• 1/4 cup "Perfectly Grilled Chicken Breast," shredded
• 1/2 teaspoon ground cumin
• 1/2 teaspoon chili powder
• 1 teaspoon fresh cilantro, chopped, optional
• 1/4 cup shredded Colby cheese
• 1/4 cup shredded Mexican cheese
1. Install 2 quesadilla cooking plates.
2. Preheat the 8-IN-1 Grill Station to 425ºF. Prepare quesadillas as the appliance heats.
3. Combine all filling ingredients in a small bowl. Mix well.
4. Place the first tortilla onto a clean plate. Add filling. Cover with the second tortilla.
NOTE: Quesadillas can be prepared ahead of time, sealed with plastic wrap, and
refrigerated; then grilled as needed.
5. When the blue READY light illuminates, lift the lid and if desired, use a heat-proof brush
to lightly coat the upper and lower cooking plates with vegetable oil
IMPORTANT: Do not use non-stick sprays as they can cause build-up on the cooking plates.
Use vegetable or olive oil instead.
6. Center the quesadilla on the lower cooking plate. Close the lid and bake for approximately
5 to 7 minutes, until tortillas are toasted and cheese is oozing.
WARNING: Over-grilling will cause cheese filling to melt out the sides of the tortillas.
7. When your quesadilla is ready, wearing oven mitts, gently open the lid and use a heat-proof
rubber spatula to remove quesadilla from the cooking plate.
WARNING: Never use a sharp or metal object as it may damage the non-stick surface of
the griddle or grill plates.
8. If additional quesadillas are to be cooked, close the 8-IN-1 Grill Station to retain heat.
9. Use a pizza cutter or a sharp serrated knife to cut quesadilla into 6 pieces. Enjoy as a snack
or serve for dinner. Serve with your favorite salsa or Pico de Gallo, guacamole, refried beans
and rice.
