Apple sponge

Preparation time: 80–110 minutes
Serves 12
Pastry ingredients
150 g butter or margarine
150 g sugar
8 g vanilla sugar
3 eggs
Juice of ¹/₂ a lemon
150 g plain flour
¹/₂ tsp. baking powder
Topping ingredients
650 g sharp dessert or cooking apples
For dusting or glazing
Icing sugar or apricot jam
Accessories
 26 cm springform cake tin
Preparation
Cream together the butter or margarine,
sugar and vanilla sugar. Beat in the
eggs one at a time.
Sift the baking powder and flour
together and fold into the creamed
mixture together with the lemon juice.
Spoon into the greased springform
cake tin .
Peel, quarter and core the apples.
Score the top of each quarter and
gently press into the cake mixture with
the scored side up. Bake until golden.
Leave to cool to room temperature,
then dust with icing sugar or spread a
little apricot jam over the top.
