FINGERS
Rich
in pecans, butter and powdered sugar, this cookie
is a holiday classic.
Premeasure
all ingredient
groups. Place in bowls near
Bread Machine. All ingredients
must be at room
temperature,
unless otherwise
noted.
A
3/4 cup butter
1/4 cup plus ! tablespoon confectioners'
sugar
B
1 teaspoon vanilla extract
C
1 cup very finely choppedpecans
D
2 cups unbleached all-purpose flour
E
2 to 3 teaspoons ice water
[] Place ingredient
Group A in pan. Press
SELECT for Mixing. Press START. Mix for 1 minute,
scraping
down sides of pan with spatula if necessary.
[] Add ingredient
Group B. Mix for 1 minute,
scraping
down sides of pan if necessary.
[] Add ingredient
Group C. Mix for 30 seconds. Add
ingredient
Group D, mix for 1 minute, scraping
down
sides of pan if necessary.
[] Add ingredient
Group E, 1 teaspoon at a time. Let
mix until dough begins to come together. Press
CLEAR/STOP. Do not overmix.
Dough will be
crumbly, but should hold together
when pressed.
[] Roll walnut-sized
balls of dough in 2 1/2-inch finger
lengths.
Taper ends slightly. Place onto baking sheets.
Bake in 300°F preheated
oven for 30 to 35 minutes.
While warm, shake in bag containing
1/2cup con-
fectioners'
sugar. Cool on rack. Yield: 2 1/2dozen

3 large eggs

3 ounces semi-sweet
chocolate, melted
1 I/2 teaspoons vanilla extract

1 cup unbleached all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt

1/2 cup choppednuts
(optional)
D Place ingredient
Group A in pan. Press
SELECT for Mixing. Press START. Mix for 2 minutes,
scraping
down sides of pan with spatula if necessary.
[] Add ingredient
Group B. Mix for 2 minutes,
scraping
down sides of pan if necessary.
[] Gradually add ingredient
Group C, then gradually add
ingredient
Group D. Mix for up to 1 minute,
scraping
down sides of pan if necessary. Press CLEAR/STOP
when dough
appears to be well blended.
Do not
overmix.
[] Quickly and carefully remove the pan from the Bread
Machine and invert over a greased 13- by 9-inch pan.
Scrape batter into pan, spreading evenly. Bake in
350°F preheated
oven 40 to 50 minutes.
