CHEVRE CRACKED-PEPPER

PESTO BREAD
What
is all this fuss about black pepper? While some
people cough and sneeze as fashionable
waiters grind it
onto salads, other diners cry, "More, more!" So, here's a
bread that will knock your socks off. Not only is it chock
full of this current
star of spices, but chevre adds a
pungent
twist.
Add ingredients
in the order listed. All ingredients
must be at room temperature.
1 3/4 teaspoons active dry yeast
3 cups bread flour
1 teaspoon salt
1 1/2 tablespoons granulatedsugar
1 tablespoon cracked black pepper, or to taste
1 t/2 tablespoons nonfat dry milk
21/4 ounces goat cheese, with herbs if desired, cut
in quarters
I cup plus 3 tablespoons plus 2 teaspoons water
[] Press SELECT for Yeast Bread.
[] Press BAKING CONTROL for Medium.
[] Press START. Bread will be ready in 4 hours and
4 minutes.
Pesto
is Italian and means simply "paste." Our favorite is
made of fresh basil, garlic, olive oil, grated cheese and
pine nuts. We experimented
and put it into bread dough.
The results are dramatic! You'll find prepared
pesto in
most supermarkets.

stirred to evenly
distribute oil
1 1/2 tablespoons olive oil
1 cup plus 1 tablespoon plus I teaspoon water
[] Press SELECT for Yeast Bread.
[] Press BAKING CONTROL for Medium.
[] Press START. Bread will be ready in 4 hours and
4 minutes.
