Tarte Tatin
Cooking time: approx. 25 min
Containers: 1 round Pyrex® cake tin, 24 cm diameter, and 1 bowl
7 ripe apples
100 g sugar
2 tbsp water
All-butter sweet pastry
Rice Pudding
Cooking time: approx. 2 hours
Container: 1 bowl, 2 litre capacity
90 g pudding rice,
1 litre of whole milk,
80 g caster sugar,
1 vanilla pod and 1 small piece of
cinnamon stick.
Apple Crumble
Cooking time: approx. 16 min
Container: 1 Pyrex® or ovenproof porcelain baking dish
5 or 6 ripe apples,
40 g brown sugar,

tsp ground cinnamon,

75 g very cold butter,
75 g whole almonds.
(or ready-made crumble topping)
Peel the apples, remove the core and cut them in two from
top to bottom. Put the sugar, butter and water in the bowl
50 g butter
and cook on MAX for 5 to 7 minutes, checking every so
often. Pour this caramel into the bottom of the tin. Place
the apple halves into the tin, packing them together tightly.
Cover the apples with the pastry without pushing it tightly
into the tin. Put into the oven on the Metal Tray and cook
for approx. 25 minutes on Combination mode:
CONVECTION HEATING 150°C + 440W, protecting the
top with a sheet of baking paper after about fifteen
minutes. Leave to cool before removing from the tin. If the
apples have given out too much liquid, reduce this by
heating in a bowl on MAX for a few minutes.
Wash the rice twice in clean water. Pour the rice, milk and
sugar into a large bowl. Add the cinnamon and vanilla. Do
not cover. Bring to the boil by heating on MAX for 9 to 10
minutes paying close attention to ensure that the milk does
not overflow, then cook twice for 1 hour at 250W. Leave to
cool, covering the bowl with a plate. The very long cooking
time of this recipe ensures that the rice is very soft without
the risk of it burning or sticking to the bottom of the bowl. If
you donʼt have whole milk replace 200 ml of semi-skimmed
milk with 200 ml of whipping cream.
4-6 people - MICROWAVE and COMBINATION COOKING
Peel the apples and cut them into pieces. Place in the dish
with the brown sugar and cinnamon and cook on MAX for 6
to 9 minutes, uncovered, stirring halfway through the
75 g sugar,
cooking time (the time required varies depending on the
type of apple used). Leave to cool. Put the almonds into
75 g flour,
the food processor to grind them, then add the butter, flour
and sugar. Pulse the food processor until you obtain a
mixture that looks breadcrumbs, but is not lumped
together. Spread this mixture over the pre-cooked apples.
Place the dish on the Wire Rack and cook for 5 to 7
minutes in Combination mode: CONVECTION HEATING
180°C + 250W, checking the colour. The crumble top, soft
when it comes out of the oven, will become crispy as it
cools.
