Cold Food Section Operation

Refrigerated Base
The refrigerated base is designed to maintain a continuous
product operating temperature of 36ºF to 40ºF (2°C to 4°C)
for storage. The refrigerated base should always be on.
Rail
The rail is controlled by a timer. The timer is located behind
the louver. Upon installation set timer to correct local time
and turn rail switch on. The timer is factory set to shut
down at 12 am and turn on at 4:30 am. The power switch
for the rail is recessed in the front. After installation the rail
power switch is unnecessary, the rail will run via the timer.
Temperature ranges for the raised rail are 33°F to 41°F. If
the main power is turned off or there is a loss of power for
longer than seven days the timer will have to be reset.
Cold Pan Start-UP
1. Clean and remove all water from cold wells. Wipe out
inside of cold well with sanitizer. Note: All water must
be removed for unit to work properly! Do not use sharp
tools in cold well!
2. The rail with empty pans and lids should be on for two
hours before filling with food.
3. Food should be placed in the unit pre-cooled to 40°F
(4°C). Fill pan to 2.0" (5cm) below top of cold pan. In
some applications, a gradual warming of product may
occur, particularly at the exposed top of the products.
Stirring or rotation of the product is necessary to
maintain overall temperature.
4. Warming of food product can occur very quickly outside
of the unit. When loading or rotating the product, avoid
leaving food items in a non-refrigerated location for any
length of time to prevent warming or spoilage.
5. To ensure product quality product must be rotated
every four hours. Always place covers on pans when not
serving to maintain temperatures.
6. Air from air vents can affect the temperature in the cold
pans. Add deflectors to vents to redirect airflow.
7. Frost will appear on the inside of the rail during normal
operation.
Rail Daily Shutdown
1. Remove all pans from rail when timer is activated. Place
food product in refrigerated base or walk-in cooler.

REFRIGERATOR EVAPORATOR FAN OPERATION

When the refrigerator is initially powered up or immediately
following a power outage the unit will begin cooling after a
3-6 minute delay. During normal operation the evaporator
fan pulses independently of the compressor as dictated by
the controller as follows:
• During the cooling mode, compressor and evaporator fan
run simultaneously.
• During the compressor off mode, evaporator fan pulses
three minutes on and three minutes off.
• During an actual defrost event other than the off-cycle
defrost, compressor stays off but the evaporator fan runs
continuously.

CONTROL ASSEMBLY

• Controls are located in the mechanical section behind a
louvered panel.
• The rail power switch is accessible through a hole in the
louvered panel.
