Hot Food Table Operation

• The hot food table keeps WATER at the correct
temperature of 195°F. Hot food tables consist of a
stainless steel table with heating elements and a water
well.
• The hot food table controller monitors the hot food
table temperature and sounds an alarm if the water
temperature drops below 180°F.
• The auto water fill system automatically fills the water
well to the correct level. Ensure hot water is used.

OPERATION

1. Make sure the drain valve, located under the hot food
table, is closed. The inlet hot water valve should be
open.
2. Turn on the hot food table power switch. The table
begins to fill automatically after a 20-second delay. If
the table does not begin to fill, see the Troubleshooting
section.

3. Once the hot food table is full, make sure no water leaks
from the hot food table, plumbing or connections. If
water leaks from the hot food table, it may not maintain
food at the proper temperature, as it will require
constant refilling.

• When the water level reaches the lower probe, the
heating elements will turn on, and the hot food table
begins heating water. The "HEAT ON" light remains
on until the water temperature reaches 195º. The
"Heat On" light will cycle on and off with the heating
elements.

• When the water level reaches the upper probe, the
water shuts off. When the water drops below the
upper probe the water will fill until it again reaches
the upper probe.

4. Allow the water to heat to the correct temperature. The
set point temperature is 195°F and the temperature
range is 190°F to 200°F.

DO NOT place product in the hot food table until the
controller displays the correct temperature.
• If the hot food table water temperature is below
180° or above 200°F, see the Troubleshooting section
immediately. DO NOT use the hot food table.
5. Check the water level throughout the day, even if you
have an auto water fill system. DO NOT rely on the hot
food table controller alarm to alert a problem.
