Tips and hints

• Always pre-heat the oven to the desired temperature, before you insert the food to be cooked. Place the
food in the middle of the roasting tray.
• The best cooking results are achieved if you turn the roasting tray after about half of the cooking time,
so that the food from the rear gets shifted to the front.

Low temperature cooking

The electronic regulation of the oven ensures a very precise temperature control. This makes it especially suitable
for the low temperature cooking method, the perfect way of producing tenderly cooked and juicy roasts.
For low temperature cooking, we recommend using superior meat only. As the roast will not be heated at
high temperatures, a low bacterial load is even more important.
Depending on the size of the roast, it should be taken out of the fridge ½ - 1 hour before cooking, so that
it can warm up to room temperature. Remove sinews and trim of the fat before cooking.
Preheat the oven to 80 °C. To minimize the loss of moisture through the surface and to achieve a good
roasting aroma, sear the meat from all sides at high temperatures for a short while and then put it in the
preheated oven. The cooking time depends on the size, texture, quality and type of the meat. Relevant
tables of meat types and related cooking times can be found in the internet and in cookbooks. Please note
that the operating time is limited to 4 h in "on" mode! If a longer cooking time is required, the operating
time limitation must be started again by pressing any key.
It is important to control the core temperature inside the roast. We recommend, therefore, using a meat
thermometer, which is available on the market.
In contrary to the normal roasting, low temperature cooking does not produce much juices coming from
the roast. This is why you have to make your sauces from other ingredients.
