LAMB AND AUBERGINE BAKE
Accessoried used: Accessoried used : Grater cheese, metal blade, slice
Ingredients for 6 people
- 600 g of lean lamb
- 4 aubergines
- 4 tomatoes
- 3 onions
- 3 cloves of garlic
- 150 g gruyere cheese
- Cayenne pepper, 1 tablespoon of mixed herbs
- Coriander, Olive oil, alt, pepper
• Cut the meat into cubes, Cut the aubergines int slices, salt them and leave to dry.
• In the bowl, use the grater cheese disc, select speed 5 and grate the gruyere.
• Fit the metal blade and chop the onions and garlic on speed 4 .Brown the onions and the galic
in a saute pan in olive oil.
• Peel and de-seed the tomatoes, chop them on speed 3 for 10 seconds. Put to one side.
• Cut the meat into cubes and chop on speed 9 for 10 seconds.
• Add the meat, the tomatoes, the herbs, coriander, cayenne pepper to the saute pan with the
onions.
• Season and cook for 15 minutes. Blot the aubegines slices with paper towel and brown them
in olive oil on both sides.
• Arrange alternating layers of aubergines and minced meat in a heatproof dish finishing with
a layer of aubergines.
• Top with grated gruyere. Cook in the oven at 180 degres for about 30mn.
• Serve hot.
