DO NOT ATTEMPT BLAST FREEZING WITHOUT THE REQUIRED MODIFICATION.
WHEN CONFIGURED TO OPERATE AS A BLAST FREEZER—
DO NOT USE THE AUTO CHILL MODE. DO NOT USE THE FOOD PROBES.
Freeze product using the TIMED CHILL mode only. Upon time expiration, the unit will automatically enter
the HOLD mode and will maintain the product in a frozen state indefinitely.
When using the blast freezer function, conduct a minimum of two (2) MANUAL DEFROST cycles
each service day to remove ice build-up on the cooling coil and to optimize freezing performance.

DO NOT DEVIATE FROM THE SET POINT VALUES SHOWN FOR BLAST FREEZING.
Consult with the Alto-Shaam factory service department before attempting to use any
other set point values for freezing product.
The ability to change the configuration of the chiller
is accomplished through the use of a special screen,
unavailable under normal operational modes; and
the use of a special access number (password). This
feature has been programmed to prevent accidental
changes or alterations by unauthorized personnel.

1. LOAD FOOD. IF A PRINTOUT IS REQUIRED OR
IF "AUTO-CHILLING" INSERT PRODUCT PROBES.
2. SELECT MODE OF OPERATION "A" OR "B" FROM
THE MENU, THEN FOLLOW PROMPTS.
DEFROSTING
TO ACCESS THE PASSWORD SCREEN,
PRESS AND HOLD THE "0" BUTTON ON THE
KEYBOARD FOR A PERIOD OF 5 SECONDS.

(factory installed) addition of an extra defrost heater between the drainpipe and the
evaporator coil. The additional heater must be installed to prevent ice build-up within
and around the drain tube entrance. This modification is available by factory quote.
