1. Make certain time and date
are entered into the chiller
control. See information
under SET-UP on page 2 of
this manual.
2. Precool the unit prior to
placing food into the chiller.
On models equipped with a
roll-in cart (trolley), place an
empty cart in the chiller
before cooling. Wait until
the unit is fully cycled to the
refrigerated hold mode of
38°F (3°C). See information
under Prechilling the Cabinet
on page 17 of this manual.
3. Place product in pans.
DO NOT OVERFILL.
See information under PAN
HOLDING CAPACITIES on
page 22 of this manual.
4. Cover hot food product with
clear plastic wrap. Make
certain the wrap is in full
contact with the surface of
the product. See information under PRODUCT
COVERING on page 19 of this manual.
5. Load product into chiller. Make certain the
total number of pans and the total load is
compatible with the capacity of the chiller.
Overloading the chiller will result in prolonged
chill times. See information titled
QUICKCHILLER LOAD CAPACITY CHART on
page 22 of this manual.

1. LOAD FOOD. IF A PRINTOUT IS REQUIRED OR
IF "AUTO-CHILLING" INSERT PRODUCT PROBES.
2. SELECT MODE OF OPERATION "A" OR "B" FROM
THE MENU, THEN FOLLOW PROMPTS.
DEFROSTING
1. REMOVE FOOD FROM UNIT.
2. SELECT MODE "C" FROM MENU, THEN
FOLLOW PROMPTS.
NOTES:
• THE UNIT WILL PERIODICALLY AUTO-DEFROST
WHILE HOLDING.
• REFER TO THE OPERATION MANUAL FOR MORE
DETAILED INFORMATION.

6. Insert food probe(s) into the
product. Push the probe tip
through the food covering
positioning the tip at the
center of the food mass.
When chilling a full load of
the same product, insert a
probe in the top, middle, and
bottom pans of product.
When chilling a full load of
more than one type of
product, insert a probe in
each one of the products.

7. Activate the AUTO CHILL
MODE. See 2.0 AUTO CHILL
