- Page 4 2ND CHAPTER GENERAL INFORMATION THE INSTRUCTIONS WORKBOOK MUST BE CONSIDERED AS AN INTEGRAL PART OF THE MACHINE AND IT MUST BE KEPT FOR FURTHER REFERENCES FOR THE WHOLE LIFE OF THE MACHINE. Before carrying out any operation with the machine, please read this workbook carefully, specially the chapter dealing with satefy standards.
- Page 5 3RD CHAPTER FORESEEN USE OF THE MACHINE GENERAL DESCRIPTION The machine is reserved for being used by a staff qualified to produce and knead flour and dough, specially by people working in bakery and pastry workshops and in pizzerias. The VL80 is a kneading machine, that is, it is used to knead any kind of dough for bread, pastry and pizzas.

- Page 8 DESCRIPTION OF THE PROTECTIONS AND OF THE SAFETY SYSTEM The dangerous working element of this machine is the spiral-shaped tool. The access to such element is prevented by a partially movable protection. The protection is completely made of stainless steel and has a grating (to allow possible additions and to control the working cycle).
- Page 9 5TH CHAPTER TRANSPORT, POSITIONING AND CONNECTION TO THE ELECTRIC NETWORK TRANSPORT The weight of the VL 80 is of 350 Kg. The weight of the VL 40 is of 180 Kg. Thanks to its particular shape, it is easy to move. Anyway, it is better not to stress the main elements, such as the protection, the basin and the control board.
- Page 10 5.3.1 EARTHING Verify the efficiency of the earthing in your electrical system. Connect the plug and the relative earthing cable according to the local electrical standards. - Page 12 7TH CHAPTER USE AND WORKING OF FORK MIXER MODEL "VL 80 – VL 802T – VL40” GENERAL INFORMATION Check the connection to the electric network so that it complies with the rules mentioned in paragraph 5.3. STARTING AND WORKING (see chapter 4.6) The machine mixes at one speed without pre-established times and the worker must carry out any operation by hand.
- Page 13 8TH CHAPTER MAINTENANCE IMPORTANT: BEFORE ANY CLEANING OR MAINTENANCE OEPRATION, OR BEFORE REACHING ANY LIVE PART OR ANY MOVING MECHANISM, TURN OFF THE POWER BY THE MAIN MAGNETO-THERMAL SWITCH AND DISENGAGE THE PLUG FROM THE SOCKET. IN ALL THOSE OPERATIONS WHICH COULD BE DANGEROUS IN ANY WAY (ADJUSTEMENTS, DISASSEMBLAGES, CHECKINGS ETC..), THE WORKER MUST BE ABLE TO CHECK THE ACTUAL SEPARATION OF THE PLUG FROM THE SOCKET AT ANY TIME.
- Page 14 SIX-MONTHLY OPERATIONS The tension and lubrification of the chains must be checked. Each chain can be checked pressing with the finger on the central part and observing the possible shifting, which must not exceed one centimetre. Should the chain be too loosen, it must be adjusted with the following procedure: 1) Turn the machine power off bringing the switch to the 0 position.
