Operating instructions

Safety instructions for operation,
cleaning and repairs
The appliance is only intended to be used for commercial cooking
applications. It should be operated and cleaned only by trained
personnel. Maintenance and repair work should only be carried
out by qualified personnel.
These instructions must be made known to the employees
concerned when they are trained in how to use the appliance.
- When the overpressure valve of the steam generator emits steam
(discharge of steam in the lower area), this means that there is a
fault! Call customer service!
- The appliance must be given a maintenance check twice a year by
qualified staff trained by the manufacturer. During service work it is
absolutely essential to check that the safety valve of the steam
generator is functioning smoothly!
- Be careful when opening the lid of the pan and the safety discharge
valve! Risk of scalding!
- Do not open the lid violently pressing it against the stop or against
the end position! It might slam back!
- Do not loosen the hosepipe connections or open the tap of the
steam generator during operation! The pressure vessel and the
pipes are under high pressure.
Danger of extreme scalding due to steam!
The appliance must first be free of pressure: observe the pressure
gauge!
- Parts of the appliance or accessories that come into contact with
food must be thoroughly rinsed with drinking water after being
cleaned with cleaning agents.
- Do not spray the appliance with water, a jet of steam or high-
pressure cleaners! First switch off the appliance before cleaning the
surrounding area with water, a jet of steam or high-pressure
cleaners!
- The appliance must not be in operation during cleaning.
- Do not use any flammable liquids to clean the appliance.
- Repairs should only be carried out by suitably qualified staff.
- When carrying out repair work, all the poles of the appliance must
be free of voltage (cut-off device provided by customer, e.g. fuse
switch-disconnector).
- It is imperative to depressurise the appliance for repair and
installation work.
- If the pan is put into storage or if temperatures below 0 °C are likely
for any other reasons, the pressure vessel must be emptied.
- The noise level at the workplace is below 70 dB (A). This
specification is necessary due to certain national safety regulations.

Meaning of the buttons and displays

LED displays

The other buttons only have a meaning for the LED display which is
located beside them.
Target values flash in the LED display.
Actual values do not flash in the LED display.
To change over from the actual value to the target value, briefly activate
one of the
or
buttons arranged on the right beside the LED
display.
The flashing target values can be changed with the
on the right beside them.
If no further setting is made for 5 seconds, the changed target value
is taken over and the actual value is displayed again.
In the boiling pan there is a scale with markings. The nominal capacity
is specified by the highest marking with a number. The maximum
capacity must not be exceeded! The maximum capacity is indicated by
.
The pan should not be put into operation when it contains less than a
quarter of the nominal capacity.
Do not pour salt or spices/flavourings into the empty pan. First fill the
pan with water as salts and concentrated flavourings promote corrosion.
Clean the pan at regular intervals and remove any scaling.
The pan heats up with the maximum initial cooking power. When the
set temperature has been reached, the pan automatically switches over
to the simmering level. This gently cooks the food while preserving its
natural nutrients and saves energy.
The temperature at which the water boils depends on the air pressure.
The higher the kitchen lies above sea level, the lower the standard
temperature needs to be set:
0 m above sea level
500 m above sea level
1000 m above sea level
1,500 m above sea level
