Pre-heating the oven

Most dishes do not require the oven to be pre-heated.
We recommend pre-heating
• for roasting and grilling quick-fry meat such
as fillet, roast beef and schnitzel, since the
pores of the meat will then close more quickly
and the meat will remain juicy.
• when using Top/Bottom heat to gently bake
products such as bread, soufflés, yeast pas-
tries, flaky pastry and sponges.
Only put temperature-sensitive food to be
i
roasted or baked into the oven once the rapid
heat-up procedure has been completed.
The pizza setting
can be used to heat up the oven
when there is no food in it.
Close the oven door.
Set the pizza mode and the required tempera-
ture. The heating-up indicator comes on.
As soon as the heating-up display goes off set
the required oven mode.
Put the food into the oven.

Baking

General instructions for baking
Set the oven selector to Top/Bottom heat
convection
or Pizza mode
on page 24 to see which mode is best for the type of
cake/biscuits you wish to bake.
Always place cakes in baking tins in the centre of the
grid.
For the most suitable shelves, modes and times, refer
to the application charts on page 24.
Baking with Top and Bottom heat
Heat up the oven with the Pizza mode
the baking temperature has been reached, switch the
oven back to Top/Bottom heat
in the oven.
Bake only on one level. Several cakes, e.g. cakes in
loaf tins, can be placed next to one another on the
grid.
For Top/Bottom heat it is best to use tins made of dark
metal or non-stick tins.

Baking with Hot air mode
With the Hot air mode you can bake on up to 2 baking
trays at the same time. No pre-heating is required.
Rack levels
1 tray: 3rd rack level from the bottom
2 trays: 3rd and 6th rack levels from the bottom
If you are baking several cakes in baking tins, about
5 to 10 minutes additional baking time will be needed for
each baking tray.
You can take out one baking tray at a time if you
i
wish, and leave the others to continue baking.
Should your recipe only give one temperature for Top/
Bottom heat, please select a temperature that is 20 °C
lower than the one indicated. If no temperature is indi-
cated, bake at 160 °C for Hot air mode .
For the Hot air mode it is best to use baking tins made
of dark metal and non-stick baking tins; light metal
baking tins are also suitable.
Important: Baking cakes with a moist fruit topping
generates a lot of excess moisture. You should bake
only one cake at the same time.
Baking with Pizza mode
This baking mode is suitable for all types of baking
products which are mainly to be baked from the bot-
tom.
Particularly recommended for
• moist cakes
• pizzas: pre-heat the oven with a baking tray
or a pizza stone
• bread: pre-heat the oven
Quantities for one baking tray (90 cm)
Cake mixture
350 g shortening, 270 g sugar, 1 vanilla sugar, 6 eggs,
670 g flour, 6 level tsp. baking powder
Yeast dough
670 g flour, 50 g yeast, 1 tsp. sugar, 1/4 l milk, 100 g
sugar, 2 eggs, 1 vanilla sugar, 100 g margarine.
