7.3 Cooker CoNtrols

THE COOKER IS EQuIPPED WITH CONTROLS OF PRIMARy AND SECONDARy AIR By WHICH IT IS ADJuSTED THE COMBuSTION AIR.
1A – PriMArY Air CoNtrol
With the inferior air control it is adjusted the passage of primary air into the low part of the cooker, through the drawer of ash and the
grate in the fuel direction. The primary air is necessary for the combustion process. The ash drawer must be regularly emptied, so that
the ash does not obstruct the primary air entry for the combustion. Through the primary air the fire is also kept alive.
THE PRIMARy AIR REGISTER MuST BE ALMOST COMPLETELy CLOSED DuRING WOOD COMBuSTION, AS OTHERWISE THE WOOD BuRNS
TOO QuICKLy AND THE THERMO-PRODuCT MAy OVERHEAT (see chapter NORMAL OPERATION)
2A – seCoNDArY Air CoNtrol)
This register must be open (i.e. turned completely to the right), in particular for the combustion of wood, so that unburnt carbon does
not undergo a post-combustion (see chapter NORMAL OPERATION).
Through this register it is possible to adjust the power of the heating. Leaving it slightly open, according to the flue of the chimney,
it is possible to keep the glass clean.
THE CONTROL REGuLATION NECESSARy IN ORDER TO OBTAIN NoMiNAl CAloriFiC OuTPuT IS THE FOLLOWING:

B – sMokes control
(Conversion of the cooking function uSE PLATE to cooking with OVEN use).
The smokes control, in the style of a chromed pull push lever, can be found on the top right corner of the front side of the cooker,
between the protection bar and the oven door. This control has two settings:
• HOTPLATE uSE
: when the bar is pushed to the back of the cooker, the combustion gases flow around the oven and directly into
the flue and up to the chimney.
• OVEN COOKING: when the control bar is pulled out, the combustion gases flow around the oven, heating it.

7.3.1 to igNite tHe FlAMe

to igNite tHe FlAMe follow the instructions below (see Cap. IGNITION) :
Š Bring the flue gas control to the cooker function – HOT PLATE uSE (any butterfly valve placed on the flue gas exhaust pipe must
also be opened).
Š Open the primary and secondary air control.
Š After having started the fire with small pieces of wood and waited until it is well lit.
Š Bring the flue gas control to the OVEN position.
Š Close any butterfly valve placed on the flue gas exhaust pipe must also be opened.

7.3.2 How to set tHe MACHiNe to Boil wAter

ŠKeep the flue gas register on the cooker function – HOT PLATE uSE.
ŠPrimary air HALF OPEN.
ŠSecondary air completely OPEN.
ŠLoad wood as described in the manual (hourly load = hourly consumption).

7.3.3 How to set tHe MACHiNe to Cook BisCuits

ŠKeep the flue gas register on the cooker function – HOT PLATE uSE.
ŠPrimary air HALF OPEN.
ŠSecondary air completely OPEN..
ŠSwitch the cooker on with a moderate load of wood until the oven thermometer indicates 150 °C.
ŠWait for 190-200 °C to be reached without additional wood being loaded.
ŠLoad a single piece of wood weighing 500 - 600 g one at a time and wait for it to burn completely before adding another.
ŠThis keeps the oven temperature stable around 190-200 °C.
Šlow position for 25-30 minutes (slow cooking) or in the medium position for 15-20 minutes (quick cooking).
ŠTurn the tray halfway through cooking, if necessary.
