heated airwithinthe oven. As both bake and broilheatingelementscycleon
and off withthe thermostat,a fan keepsthe heated air circulatingaround the
food. The constantlyrecirculatingheated air in the convectionoven strips
awaythe layer of cooler airthat surroundsfood. Consequently,manyfoods
cook more quickly. Distributedheat makes multiple rack cookingpossible.
